Ingredients:
- 1 cup of sesame seeds
- 1/3 cup of raw peanuts
- 1/2 teaspoon of cardamom
- 1 cup of grated jaggery
- 10 tablespoon of water (Keep extra water to add if required)
Preparation:
- Heat the pan on low flame and add 1 cup sesame seeds to it
- Stir at regular intervals and roast the sesame seeds
- The sesame seeds pop and change color, this takes about 4 to 5 minutes.
- Once the sesame seeds are roasted well, remove them, and keep in a plate
- Then add 1/3 cup of raw peanuts to the same pan and stir at regular intervals
- Roast those peanuts till it gets crunchy and color will change to brown
- Remove the peanuts in a separate plate. Once peanuts are cool try to remove the peanut skins by rubbing them between your palms
- When the peanuts are cool, crush them. You can crush them in a blender or spice grinder.
- Add the crushed peanuts to the roasted sesame seeds
- Next add 1/2 teaspoon cardamom powder
- Mix very well - Crushed peanuts, roasted sesame and cardamom
- In the same pan take 1 cup powdered jaggery or grated jaggery
- Add 10 tablespoon water (add based on required)
- Keep the pan on the stove on a low flame
- Keep on stirring the jaggery to get it dissolves and It will start bubbling
- Continue to cook until it mixes well and gets thick/sticky (10-15 mins)
- Switch off the flame and add the dry roasted mixture of sesame seeds, crushed peanuts and cardamom powder and mix thoroughly with the sticky jaggery
- Keep the pan on your kitchen surface.
- When the mixture is still hot, begin to form and shape the Rasi laddu from it. Do shape the laddu when the mixture is hot
