Enduri Pitha

Enduri Pitha or haldi patra pitha is prepared in Odia homes on Prathamasthami Puja. The uniqueness of this recipe lies in the aroma of turmeric leaves which gets blended into the pitha. 

Ingredients:

  • 2cups pitha/idli rice
  • 1 cup urad dal
  • 1 cup freshly grated coconut
  • 100 gm yogurt cheese
  • 150 gm jaggery
  • 5-6 small cardamoms and 6-7 black peppers
  • Green turmeric leaves
  • Salt to taste

Method:

Soak rice and urad dal together for about 8 hours. Wash the same thoroughly and then grind into a thick batter. It need not be a very fine paste. Whip it well. Leave the batter for fermentation for about eight hours. Add salt and mix well. 

Now to prepare the stuffing:

 Place a frying pan on medium flame. Put the grated coconut, cottage cheese and jaggery. Stir and fry the same till it becomes a little dry. Then add powdered cardamom and black pepper. Mix well and keep aside.

Now to prepare the Pitha:

Take one whole green turmeric leaf. Put a little batter on the leaf and flatten the same. Then put the required quantity of stuffing on the batter and fold the turmeric leaf lengthwise in such a way that the stuffing gets sandwiched in between two layers of batter. After making 5 to 6 pithas, now steam it for 20 minutes. After steaming the aromatic pithas are ready. While serving just need to peel off the turmeric leaf and enjoy the delicacy. The delicate aroma of turmeric leaf is a special feature of the pitha. In case of non-availability of green turmeric leaf, you could also alternatively use banana leaf. But in that case the aroma of turmeric leaf would be missing.
